Okay, this seems like a stupid question, but when Champ was younger, he lost his baby teeth, and new ones came in. Last night as
I was brushing his teeth, I noticed that he is missing one of his back
way back there, like a molar, it looked like he had just lost it earlier
in the day. So are new ones coming in? I guess they are like people
and have baby teeth, and then get their adult teeth?

Yes, this is correct.

like people they lose one set of teeth... usually this is done by the time they are 4-6 months old.
riley is 7 months and has all of her adult pearly whites. she shouldn't lose another tooth until she is a very old dog.

Champ is 17 months, and he lost the very last tooth in the back on the bottom. I know he did get new teeth when he was younger, but I wasnt
sure about the back teeth.

Just like humans it can take until maturity for them to loose and gain their new adult teeth. this is not too common usually all the adult teeth are in by 6 months but it happends. Sometimes if the underlying adult tooth is crooked or misplaced it may never come up above the gumline. Something to keep an eye on to ensure the tooth comes in ok
